One of Creighton's favorite meals
1 pound orchetti
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 bunch broccoli rabe
1 cup grated Parmesan (4 ounces)
Kosher salt and black pepper
Boil the pasta and when it has three or four minutes left throw in the broccoli rabe.
Meanwhile, brown the sausage in olive oil- breaking it up as it cooks.
When the pasta and broccoli are ready add them to the pan with the sausage.
I transfer mine directly from the pot to the pan with a slotted spoon. It will give you
a little bit of pasta water, which helps bring everything together.
Add the Parmesan cheese and salt and pepper to taste.
